Gooey Butter Cookie Dough Bars

This week we are going to go into a little more of an in-depth recipe inspired by Shelly's recipe on Cookies&Cups. Mostly because our recipe/baking/bored employee wanted to kill time and use up all those eggs her roommate impulse bought from Costco on a panic shopping trip last month. We hope you enjoy this recipe as much as she did.

Big Dipper Gooey Butter Cookie Dough Bars Ingredients:

Base

  • 1 box yellow cake mix
  • 1/2 cup butter, melted
  • 1 egg

Cookie Dough Filling

Top Layer

  • 8 oz cream cheese, room temperature
  • 1/3 cup light brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/2 cups powdered sugar

Big Dipper Gooey Butter Cookie Dough Bars Instructions

  1. Preheat oven to 325°
  2. Line 9×13 pan with foil and spray with cooking spray
  3. In the bowl of a stand mixer combine cake mix, egg and melted butter until a thick dough forms.
  4. Press this into your prepared pan.

Cookie Dough Filling

  1. Mix edible Cooke dough, eggs, and flour together in a bowl, until smooth. 
  2. Place cookie dough mixture on top of the cake layer. Evenly distribute the cookie dough over the mixture. 

Top layer

  1. In the bowl of a stand mixer beat cream cheese and brown sugar until smooth. Add in eggs and vanilla, mixing until combined and smooth.
  2. Beat in powdered sugar until there are no lumps.
  3. Pour this over the cookie dough layer.
  4. Place 9×13 pan on top of a cookie sheet and place in the oven on middle rack. Bake for 30-35 minutes until edges are light golden brown and center is almost set. It will be a little “jiggly”.
  5. Allow to cool on a wire rack for 30 minutes and then transfer to the refrigerator to chill completely for at least 2 hours.
  6. When chilled dust with powdered sugar and cut into squares.
